Backyard BBQ Recipes

It is hard to believe that it is August already! I think of summer picnics that include BBQ, watermelon, baked beans and mac-n-cheese....some of my favorite foods! So here are a couple of my "backyard BBQ" recipes that I hope you will enjoy!

BBQ Sauce:

2 cups apple cider vinegar

1 1/4 cups catsup

1 1/2 oz dark brown sugar

1 Tbsp crushed Red Chile flakes

1 Tbsp Kosher Salt

1/2 Tbsp Cracked Black Pepper

1/2 Tbsp Chipotle Chile Powder

Method:

In a 4qt sauce pan, whisk together vinegar, catsup, sugar, chile flakes, salt, pepper, and chile powder; bring to a boil and simmer over medium heat until thickened....about fifteen minutes. Set aside until ready to use This is a very tangy slightly spicy BBQ sauce that will go well with anything!

Tennessee Style Mustard Slaw:

1/2 cup mayonnaise

1/4 cup prepared yellow mustard

1/4 cup apple cider vinegar

1/4 cup sugar

2 tsp kosher salt

2 tsp cracked black pepper

1 tsp celery seeds

1 medium head of green cabbage, shredded

Method:

Whisk together mayonnaise, mustard, vinegar, sugar, salt, pepper, and celery seeds in a bowl. Add cabbage and toss. Taste and adjust seasoning. Serve chilled

Good luck and good cooking! Brian
