Executive Chef Sonny Pache
As an operating partner of Cameron Mitchell Restaurants, Chef Pache brings passion and dedication to every dish. Raised in Southern California, Chef Pache was strongly influenced by his family’s Filipino roots and his mother’s passion for ingredients and sense of culinary adventure.
Originally a business major, he was encouraged to go to culinary school by friends who enjoyed his cooking. Pache took their advice and ultimately landed an apprenticeship at the Columbus Fish Market and M, a fine dining restaurant. In less than a year, Chef Pache was promoted to Executive Chef at M. In 2009, he joined OCEAN PRIME, opening the Dallas and Philadelphia locations before taking the lead at OCEAN PRIME Denver.
He’s competed twice in the American Institute of Wine and Food’s Annual Caesar Salad Competition and was named champion in 2012. He was also selected to participate in the Dallas Cowboys Stadium Chef Showdown in 2011 and 2012. He was awarded executive chef of the year for Cameron Mitchell Restaurants in 2011.
Chef Pache attributes his success in the kitchen to his co-workers, who teach him something new every single day.
General Manager Walter Trimble Hatcher IV
Boasting nearly 30 years in the hospitality industry, Walter Trimble Hatcher IV has been a part of the Cameron Mitchell Restaurant family since 1997. Walter first came to work at Cameron’s in Bexley, Ohio, before moving on to open Mitchell’s Ocean Club and Mitchell’s Steakhouse in Columbus. Prior to OCEAN PRIME Dallas, Walter worked at OCEAN PRIME Phoenix, OCEAN PRIME Tampa, and OCEAN PRIME Troy. He’s very pleased to call Dallas home and looks forward to welcoming each and every guest.
Sales & Event Manager Lauren Howle
Lauren started her career with Ocean Prime Dallas in 2009 at the opening of the restaurant as a server. In 2014 she was promoted to dining room manager. Since then she has overseen the beverage program, training program, and private dining. She enjoys helping make guests special moments memorable.
