Executive Chef Nicholas Pratt

Nicholas Pratt began his career in the restaurant industry as a dishwasher where he very quickly discovered his passion for working in the kitchen and his inspiration to one day become a chef.

After joining Ocean Prime Orlando as a line cook in 2012, Pratt quickly climbed the ranks. Within six years, Pratt had worked his way up from sauté station to broil cook and then sous chef. In July 2018, Ocean Prime promoted Pratt to the position of executive chef, recognizing his true dedication for advancing his skills and passion for providing exceptional service.

Pratt’s passion for creating fresh food and delivering genuine hospitality earned him the 2016 Sous Chef of the Year award presented by Cameron Mitchell Restaurant at the company’s annual leadership conference held in Columbus, Ohio.

Born in Miami, Florida, Pratt and his family relocated to Orlando when he was a child. His passion for cooking was strongly influenced by his family’s Puerto Rican and Cuban heritage, pulling from their culinary traditions using spices and robust flavors as well as their dedication to crafting comfort foods that warm people’s hearts. A graduate of Le Cordon Bleu College of Culinary Arts in Orlando, Nicholas attributes his success to Cameron Mitchell Restaurants. He enjoys working for a company that truly puts its associates first, and provides the necessary tools and training to help them succeed.

General Manager Michael Kopoian

Boasting more than 25 years in the restaurant and hospitality industries, Michael Kopoian brings passion and strong leadership to his role at OCEAN PRIME Orlando, where he is an operating partner as well as General Manager. Originally from Rhode Island, Kopoian found his place in Orlando 20 years ago and has loved every minute since.

Kopoian joined the OCEAN PRIME team in October 2007. Kopoian began his career as a dining room manager and later earned the position of general manager at E-Brands where he was named “Manager of the Year” and was sought after as a manager lead trainer for seven restaurants across the United States.

When he’s not in the restaurant, he enjoys fishing, spending time with family, and attending concerts.

 

Sales & Event Manager Shannon MacLaren

Shannon MacLaren joined Ocean Prime Orlando as a guest services associate in 2011, jumpstarting her career in the hospitality industry. An Oregon native, Shannon naturally excelled in providing an unparalleled experience for guests and was quickly promoted to private dining coordinator in 2012. Shannon stepped into her new role as sales and event manager in 2018 and is dedicated to creating memorable events and experiences for guests, offering personalized hospitality for every occasion. When she is not working, Shannon enjoys taking dance classes and exploring Orlando with her dog Rambo.
