Executive Chef Adam Polisei
Adam Polisei employs a passionate and approachable leadership style in his role as executive chef of OCEAN PRIME Tampa. A Michigan native, Polisei comes from a long line of culinary professionals. Polisei’s great-grandfather immigrated to the United States and became chef at the Detroit Hotel. Polisei himself was captivated with the restaurant business from a young age. Shadowing his uncle at Hungry Howie’s, he eagerly completed any task he was allowed to as a 10-year-old.
“Once I really started cooking and I realized that creating something in a kitchen could bring so much joy to someone’s day and make a lasting memory on their lives, I was hooked,” says Polisei.
Polisei worked at Harper’s Restaurant and Brew Pub in East Lansing, Michigan, while completing a degree in food industry management from Michigan State University. He then ventured to Cincinnati, where he quickly became sous chef at Mitchell’s Fish Market. From there, Polisei relocated to Florida to become sous chef of OCEAN PRIME Tampa before taking on the executive chef position at OCEAN PRIME Troy and then returning to OCEAN PRIME Tampa as executive chef.
When not experimenting in the kitchen, Polisei and his wife, Heather, love enjoying food and wine together, cheering on the Detroit Tigers, and soaking up the outdoors while fishing and golfing.
General Manager Kal Harris
Kal Harris began his hospitality experience as a bus boy, then quickly grew into a management position by the age of 19. Establishing his passion for the industry, he has held various leadership positions in restaurants and country clubs. Originally from Buffalo, New York, Harris established roots in Tampa more than 10 years ago, and most recently served as Managing partner for a restaurant in Tampa.
After meeting the Ocean Prime team in Tampa and experiencing the restaurant as a guest, Harris was drawn to the dynamic workplace culture and Cameron Mitchell Restaurants’ focus on empowering associates to learn and grow. In addition to bringing extensive experience to Ocean Prime, Harris believes his greatest assets are his appreciation for genuine hospitality, his quest to enhance the guest’s experience, and his focus on caring for associates.
Having recently joined Ocean Prime in Tampa, Harris has already witnessed the impact of Ocean Prime’s genuine hospitality: “We recently had a guest who was hosting an early Thanksgiving dinner as he prepared to send his daughter away to school. Executive Chef Adam Polisei and team prepared an extra special meal for the family, including traditional Thanksgiving side dishes that aren’t on the Ocean Prime menu, and made sure they had a special celebration that was especially memorable,” said Harris. “To me, it’s all about making connections, and making memories, and that’s what we did for this family.”
Harris grew up playing hockey, and is also a big sports fan (Go Bills!) In his free time, Harris can be found watching sports or spending time outdoors enjoying Florida life and fishing.
Event Manager Jo Truett
A Florida native, Jo Truett brings more than 15 years of experience in the Hospitality Industry to the Tampa Bay area. She began with Cameron Mitchell Restaurants in 2008 at Mitchell's Fish Market in Jacksonville, Florida. Later growing into leadership roles as Beverage Manager and Assistant General Manager, Jo found her passion within Private & Corporate Events in 2012. Jo's exposure to over 10 different CMR properties coast to coast has assisted in her perspective and ability to create raving fans of every guest through a flawless and memorable experience with Ocean Prime.
